Apple-Almond Ice Cream Topping
Try this spiced fruit topping on pancakes and waffles too!
1 tbsp butter or margarine
2 large apples, peeled, cored, and cut into thin slices
2 tbsp packed brown sugar
1/4 tsp ground cinnamon
Pinch grated nutmeg
Pinch ground cloves
1/4 C apple juice
1/4 C sliced almonds, toasted
In a medium nonstick skillet melt butter over medium heat. Add apples, brown sugar, cinnamon, nutmeg, and cloves. Cook, stirring often, until the apples are tender, 3-4 minutes.
Stir in the apple juice and bring to a boil over medium-high heat.
Remove skillet from heat and let cool slightly. Stir in toasted almonds. Serve warm.
