Apple Butter Muffins


1 ½ cups all-purpose flour
½ cup granulated sugar
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon nutmeg
½ cup unsalted butter, melted
1 large egg
¾ cup apple butter *

* In our experience, the outcome is completely dependent on the quality of the apple butter. So make your own or find a reliable supply of quality product!

Preheat oven to 400°F. Use silicone muffin mold or grease muffin tin.

In large bowl, whisk together flour, sugar, salt, baking powder, baking soda, cinnamon and nutmeg. Melt butter and set aside to cool.

In a mixing bowl, beat egg until smooth. Stir in apple butter. Slowly pour in melted butter, stirring constantly. Add liquid ingredients to dry ingredients, stirring just until the mixture is smooth.

Spoon into muffin cups. Bake 15 to 18 minutes until tops spring back lightly when touched. Do not brown tops (usually means they are a bit dry). Delicious served warm!
