Apple Walnut Coffee Cake
1/2 C sugar
1/4 C butter, softened
1/4 C sour cream
1 egg
1/2 tsp vanilla
1 C all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp milk
1 apple, peeled, cored and chopped
Topping:
1/4 C chopped walnuts
1/4 C brown sugar
1 tbsp butter, softened
1/2 tsp cinnamon
Preheat oven to 350 degrees F. Line an 8-inch square baking pan with parchment paper and spray with non-stick spray.
In medium bowl combine sugar, butter, sour cream, egg, and vanilla. Beat until blended, about 2 min.
In small bowl stir together flour, baking powder, and baking soda. Add to butter mixture along with milk; beat until smooth. Add apple and stir until just mixed. Pour into pan and smooth top.
Combine topping ingredients in a small bowl; sprinkle over batter.
Bake 25-30 minutes or until toothpick inserted in center comes out clean. Let cool 10 minutes. Cut into squares and serve warm, or let cool completely and serve at room temperature.
