Applesauce Raisin Squares

1 egg
1/4 C vegetable oil
1/2 C plain yogurt
3/4 C brown sugar
1 C applesauce
1 tsp vanilla
1 tsp lemon zest
1/2 C raisins
1 C whole wheat flour
1/2 C natural wheat bran
1 tsp baking powder
2 tsp cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
1/3 C sliced almonds

Preheat oven to 350 degrees F. Line the bottom of an 8-inch square baking pan with parchment paper, and spray with non-stick cooking spray.

In a large bowl whisk egg. Add oil, yogurt, brown sugar, applesauce, vanilla, and lemon zest. Mix well.

In another bowl stir together raisins, flour, bran, baking powder, cinnamon, ginger, and nutmeg. Add to wet ingredients and stir only until combined.

Turn mixture into baking pan. Lightly press almonds on top of batter. Bake for 45 minutes or until tester inserted in center comes out clean. Let cool completely before cutting into small squares.

Makes 25 1 1/2-inch squares.
