Applesauce Coffee Cake

1/2 C vegetable oil
1/2 C sugar
1/3 C light brown sugar, packed
1 egg + 1 egg yolk
2 tsp vanilla extract
1 C applesauce, unsweetened
1 2/3 C cake/pastry flour
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp ground ginger

Streusel Topping:
1/2 C light brown sugar, packed
2 tbsp all-purpose flour
2 tsp ground cinnamon
2 tbsp unsalted butter, melted
1 C walnut pieces, lightly toasted

Preheat oven to 350 degrees F. Spray a 9x5-inch loaf pan with non-stick cooking spray and line the bottom with parchment paper.

For loaf, whisk oil, brown sugar, egg, egg yolk and vanilla until smooth; stir in applesauce. In a separate bowl sift flour, baking powder, baking soda, nutmeg and ginger; stir gently into applesauce mixture.

For streusel, combine brown sugar, flour, and cinnamon. Stir in melted butter and walnut pieces until coated.

Spoon half of batter into prepared pan and sprinkle with half of the streusel. Top with remaining batter and sprinkle on remaining streusel. Bake for 40-50 minutes, until a tester inserted in the center comes out clean. Cool for 20 minutes before turning out on a rack to cool completely.
