Baked Apples

4 large apples
1/2 C nuts, raisins, or a combination of both
2 tbsp brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4 C maple syrup, divided
1/4 C apple juice or apple cider

Preheat oven to 375 degrees F.

Core apples. In a small bowl combine nuts/raisins, brown sugar, cinnamon, nutmeg, and 2 tbsp maple syrup. Place apples in a baking dish and stuff with but mixture.

In another small bowl combine apple juice with remaining 2 tbsp maple syrup.

Pour juice mixture around the apples. Cover with foil and bake until apples are tender, 45 minutes to 1 hour.
