Black Bean, Corn, and Rice Salad
1 C basmati rice
1/2 can black beans, drained and rinsed
2 C fresh or frozen corn
1 red pepper, diced
1 jalapeno pepper, seeds and ribs removed, finely chopped
1/3 C chopped cilantro
1/3 C chopped basil
2 tbsp chopped chives or green onions
1/4 C red wine vinegar
1/2 tsp each salt and freshly ground pepper
1 garlic clove, minced
3 tbsp olive oil
Prepare rice according to package. Set aside and let cool completely.
In a large bowl whisk vinegar, salt and pepper, garlic, and olive oil. Add remaining ingredients and toss to coat.
Chill at least one hour and serve.
