Brussels Sprouts with Bacon and Apple
1.5 lbs Brussels sprouts, trimmed and halved lengthwise
.5 lb bacon, cut into 1/4-inch dice
1 apple, cored and cut into 1/4-inch dice
1/4 tsp fresh thyme leaves
coarse salt and freshly ground pepper
Cook Brussels sprouts in large pot of boiling salted water until bright green and tender, about 6 min.
Meanwhile, place bacon in a large skillet over medium heat. Cook until fat renders and bacon is crisp, 2-3 minutes. Add apples and cook, stirring occasionally, until apples are golden brown, 2-3 minutes more. Stir in thyme. Using slotted spoon transfer Brussels sprouts to skillet. Season with salt and pepper to taste. Serve immediately.
