Fun, easy to prepare, and a real show stopper with guests, 8 for this recipe!
To start:
• 4 Bush Delicata Squash cut in short halves like cups
• Spoon out centers removing all of the seeds
• Cut the bottom just enough to stable on a flat surface
• Place in ovenproof baking dish treated with cooking spray and set aside
Filling:
• One Smiths' Honeycrisp™ or Jonagold apple, core removed and finely
chopped
• One Bartlett or Bosc pear, core removed and finely chopped
• ½ cup finely chopped celery
• ½ small cooking onion, finely chopped
• 1 clove of garlic, finely chopped
• ½ cup walnuts or pecans, chopped
• ¼ teaspoon each of nutmeg, cinnamon, pepper and salt
• Toss all ingredients in a large bowl
Assembly:
• Fill each squash cup with apple filling
• Top each cup with a dab of butter and a sprinkle of brown sugar
• Wrap each cup individually with tin foil, shiny side in
• Bake in 375 degrees F oven for one hour or until squash is tender.
• Serve hot, foil removed so everyone can see the colourful stripes!
