Buttermilk Apple Cake

1/4 C soft margarine (eg. Becel)
2/3 C brown sugar, packed
1 1/2 C buttermilk
1 C all-purpose flour
1 C whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tbsp cinnamon
1/2 tsp salt
2 apples, cored and finely chopped

Topping:
1/4 C brown sugar, packed
2 tsp cinnamon
2 tbsp chopped nuts

Preheat oven to 350 degrees F. Line the bottom of an 8-inch or 9-inch baking pan with parchment paper and spray with non-stick cooking spray.

In large bowl beat together margarine and sugar. Beat in buttermilk. Add flours, baking powder, baking soda, cinnamon, salt and apples. Mix until combined. Spread into baking pan.

Combine topping ingredients and sprinkle over batter. Bake for 40-45 minutes or until tester inserted in center comes out clean. Let cool in pan.
