Caramel Apples
6 wooden popsicle or caramel apple sticks
6 small apples, stems removed
1 C heavy cream
1 C sugar
1/4 C dark corn syrup
2 tbsp unsalted butter
Insert sticks into apples. Prepare an ice-water bath by pouring water and ice cubes into a large bowl. Line a baking sheet with parchment paper.
In saucepan bring cream, sugar, corn syrup, and butter to a boil over medium-high heat. Continue to cook until mixture reached 245 degrees on a candy thermometer, 10-12 minutes.
Place saucepan in ice-water bath to stop the cooking. Dip apples into caramel, using a spoon to coat each apple 3/4 of the way up the side. Transfer to baking sheet and refrigerate until set, 15 minutes or up to overnight.
