Cheesy Corn Fritters


1 C frozen corn, thawed and drained (or 1 C fresh)
1/4 C cornmeal
1/4 C whole wheat flour
1/4 tsp salt
pinch baking soda
3/4 C grated cheddar cheese
2 green onions, finely sliced
1 egg
1/4 C milk

In a medium bowl whisk cornmeal, flour, salt and baking soda. Add cheese and stir. Mix in corn and green onions.

In a small bowl whisk egg and milk until frothy. Add to corn mixture and stir just to combine.

Heat a bit of vegetable oil in a large skillet or griddle over medium heat. Drop four scoops of batter in the hot pan; flatten slightly.

Cook about 6 minutes, turning halfway through, until golden brown.

Serve with salsa and sour cream, if desired.
