Chicken and Apple Curry
1 tbsp butter
2 tbsp vegetable oil
4 boneless, skinless chicken breasts
1 onion, chopped
3 garlic cloves, minced
3 tbsp curry powder
1 apple, cored and diced
1/4 C dried apricots, chopped
1/4 C raisins
1 x 14.5 oz can chicken broth
Melt butter with oil in large deep skillet over medium heat. Add chicken and brown on both sides, about 5 minutes; transfer to a plate.
Add onion and garlic to skillet and cook until translucent, about 5 minutes. Stir in curry powder; cook, stirring, for one minute.
Return chicken to skillet. Add apple, apricots, and raisins, and broth. Cover and simmer until chicken is cooked through, about 10 minutes. Remove chicken to platter. Continue to cook sauce uncovered until slightly thickened and fruit is tender, about 5 minutes more. Spoon over chicken and serve with basmati rice.
