Corn Muffins
1 1/4 C all-purpose flour
1 C cornmeal
1/4 C sugar
4 tsp baking powder
1/2 tsp salt
1 egg
1/4 vegetable oil
1 C buttermilk or milk
Preheat oven to 400 degrees F.
In a large bowl combine flour, cornmeal, sugar, baking powder and salt.
In a medium bowl whisk egg until frothy. Whisk in oil and buttermilk. Add to dry ingredients and stir just enough to moisten.
Fill muffin cups 3/4 full. Bake 20-25 minutes.
