Cornbread (Gluten-Free, Vegan)

2 1/4 C cornmeal
1 1/3 C spelt flour
1/4 C sugar
2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
2 1/2 C water

Preheat oven to 400 degrees F.

Mix dry ingredients in a large bowl. Add water and stir well.

Pour into a large greased loaf pan. Bake for 1 hour. Cool before slicing.
