Curried Cauliflower and Apple Soup
1 small onion, finely chopped
1 clove garlic, minced
1/2 tsp curry powder
1 1/2 tbsp butter
1 large apple, peeled, cored, and chopped
1 small head cauliflower, chopped (about 4 C)
1 1/2 C chicken or vegetable broth
1 C water
1/4 C heavy cream
salt and pepper
In a large saucepot over medium-low heat, cook onion, garlic, and curry powder until onion is softened.
Add apple, cauliflower, broth and water and simmer, covered, until cauliflower is very tender, about 20 minutes.
In blender puree soup in batches until very smooth. Return to saucepot.
Stir in cream and season with salt and pepper to taste. Heat until hot and serve.
