Maple Bran Muffins
Makes 10-12 muffins
3/4 C natural wheat bran
1/2 C milk
1/2 C maple syrup
1 egg, lightly beaten
1/4 C vegetable oil
1 1/4 C whole wheat flour
3 tsp baking powder
1/2 tsp salt
1/3 C chopped walnuts
Preheat oven to 400 degrees F. Line a 12-cup muffin tin with paper liners or spray with non-stick spray.
Combine bran, milk and maple syrup in a medium bowl. Mix in egg and oil.
In a large bowl combine flour, baking powder, and salt. Add bran mixture, stirring just to moisten. Fold in walnuts.
Bake for about 15 minutes.
GLAZE (optional):
Combine 1 tsp butter, 1/2 C icing sugar and 1 tsp maple syrup in a small bowl.
Add more maple syrup as needed. Spread over muffins while still warm.
