One Bowl Maple Cake

1 2/3 C all-purpose flour
1 C packed brown sugar
1 tsp baking soda
1/2 tsp salt
2/3 C maple syrup
1/3 C vegetable oil
1 tsp vinegar
1/2 C chopped walnuts

Icing sugar, for dusting

Preheat oven to 350 degrees F. Line an 8x8-inch baking pan with parchment and spray with non-stick spray.

Combine all ingredients except nuts in a large bowl and mix with an electric mixer until smooth. Fold in walnuts.

Bake for 35-40 minutes. Cool completely, then cut into squares and dust with icing sugar.

Serve with a scoop of vanilla ice cream.
