Maple Walnut Blondies

Yield: 16

1/2 C unsalted butter, softened
1/2 C brown sugar
1/2 C maple syrup
1 egg
1 tsp vanilla
1 C flour
2/3 oats (not instant)
1/2 tsp baking powder
1/2 C chopped walnuts

Preheat oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper and spray with non-stick spray.

In a large bowl beat butter and brown sugar until creamy. Add maple syrup, egg, and vanilla; beat until thoroughly combined.

In a medium bowl stir together flour, oats and baking powder. Add to wet ingredients and stir until just mixed. Fold in walnuts.

Bake about 30 minutes, or until tester comes out mostly clean. Do not overbake.
