Pork Chops with Apple Chutney

4 tbsp olive oil
2 tsp coarse salt
1 tsp freshly ground black pepper
4 boneless pork chops
1 large onion, diced
4 apples, peeled, cored, and diced
1/2 C cider vinegar
1/2 C raisins
1 tsp ground ginger
1/4 tsp dry mustard
Pinch of cayenne pepper

Preheat oven to 400 degrees F.

Heat 2 tbsp olive oil in a large ovenproof skillet over medium heat. Sprinkle salt and pepper on both sides of pork chops and add to skillet. Saute until golden brown, about 2 minutes per side.

Place skillet in oven and roast until meat is cooked through, about 5 minutes. Transfer pork chops to a platter.

Meanwhile, heat remaining 2 tbsp olive oil over medium heat. Add onion and saute until translucent and beginning to brown, about 6 minutes. Add apples and saute 4 minutes. Add vinegar, raisins, ginger, mustard, and cayenne. Cover and cook, stirring occasionally, until apples are tender, about 3 more minutes. Season chutney with salt and pepper to taste.

Serve apple chutney over pork chops.
