Spiced Pumpkin Date Muffins
1 egg
1/2 C milk
1/2 C pumpkin puree
1/2 C sugar
1/4 C vegetable oil
1 tbsp grated orange zest
1 1/2 C flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 C chopped dates
Preheat oven to 400 degrees F.
In a medium bowl whisk egg. Add milk, pumpkin, sugar, oil and zest.
In a large bowl stir flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir in dates. Add to wet ingredients and stir until just combined.
Spoon into muffin tin, filling cups 3/4 full. Sprinkle tops with coarse sugar if desired.
Bake 20-25 minutes.
