Pumpkin Loaf

1 C vegetable oil
2 1/2 C sugar
4 eggs
1 x 19-oz can pure pumpkin
2 C whole wheat flour
1 1/3 C all-purpose flour
1 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp each cinnamon, cloves and nutmeg
1 C raisins
1 C chopped dates
optional: 1 C chopped nuts

Preheat oven to 325 degrees F (for convection oven). Spray two large loaf pans with cooking spray.

In a large bowl beat together oil, sugar, and eggs. Add pumpkin and mix well.

Add dry ingredients and stir until almost moistened. Fold in raisins and dates. Bake about 1 hour, or until tester inserted in centre comes out clean.
