Red Cabbage with Apple

2 slices bacon, cut into 1/2-inch pieces
1 small onion, halved and thinly sliced
1 small red cabbage, cored and thinly sliced
1 apple, peeled, cored and thinly sliced
3 tbsp cider vinegar
coarse salt and ground pepper

In large heavy saucepan cook bacon over medium heat until browned, about 10 minutes.

Add onion and cook until soft, about 5 minutes.

Add cabbage, apple, vinegar, and 1/4 C water. Cook, stirring, until cabbage wilts, about 5 more minutes. Season with salt and pepper.

Cover and cook over medium-low heat, stirring occasionally, to desired softness, about 45 minutes to 1 hour. Add more water if cabbage begins to stick.

Serves 4-6.
