Stewed Apples
1 tbsp butter or margarine
2 apples, peeled, cored, and thinly sliced
pinch salt
3/4 C apple juice or apple cider
1 tsp lemon juice
1/2 tsp cinnamon
pinch ground nutmeg
In a skillet melt butter over medium-high heat. Add apples and salt. Cook, stirring occasionally, for 4-5 minutes.
Add apple juice, lemon juice, cinnamon and nutmeg. Cook until liquid is reduced by half and apples are just tender, 3-5 minutes.
Great on pancakes, waffles, or ice cream.
