Sweetcorn Chowder
1 large bag frozen corn, defrosted and drained
3 green onions, chopped
1 clove garlic, pressed
1/4 C durum semolina
5 C vegetable or chicken stock
large handful tortilla chips
handful grated cheese
2 long red chillies, seeded and chopped (optional)
Salt and freshly ground pepper
Put corn, green onions, garlic, and semolina in a food processor and blend well (this may have to be done in batches).
Meanwhile, heat stock in a large saucepan. Add corn mixture and bring to a boil. Reduce heat and simmer, partially covered, for 10 minutes. Season with salt and pepper.
Place torilla chips on a baking sheet and sprinkle with cheese. Warm in a hot oven until the cheese melts.
Top bowls of soup with chips, sprinkled with red chilli.
