Turkey and Apple Curry
2 tbsp butter
1 apple, cored and diced
2 shallots, minced
2 cloves garlic, minced
1 tbsp curry paste
1 red pepper, diced
1 C chicken stock
2 C cooked turkey, chopped
1 C coconut milk
1 tsp cornstarch
1 tsp water
2 tbsp cilantro, chopped
Melt butter in shallow saucepan over medium heat. Add apple, shallots, garlic and curry paste and saute until fragrant and softened, about 3 minutes.
Add red pepper and chicken stock and bring to a boil.
Add turkey and coconut milk and return to a boil. Reduce heat and simmer for 5 minutes.
Whisk together cornstarch and water and add to saucepan. Stir and simmer for 1 minute or until slightly thickened. Sprinkle with cilantro before serving.
Serve with basmati rice.
